It’s official. School is in session! Though my kids are entering their second week of school, I don’t quite have everything organized and running like clockwork. My biggest challenge is school lunch, I need inspiration for those non-hot-lunch days. I’m looking for versatile recipes that can be adjusted to whatever is in the fridge. Thankfully, there are a lot of moms who figured it out and have wonderful blogs to share their wisdom. From pita-pocket salads to quesadilla kebabs, I’m adding these school lunch ideas to our weekly meal list.
We use tortillas for various quesadilla recipes but never for these kebab-style cheese pinwheels. Clever and fun! If your kids like tortillas (like mine), you’ll want to see 13 Ways to use Tortillas in your Back to School Lunch Packing from Evolving Motherhood.
I met Laura at the 2015 Mom 2.0 Summit and was impressed with her energy and love for good food, for kids and adults. Have you been on MOMables? Well, that’s her too. And she has always has good tips like “Leftovers make a great lunch!”, works for her Spinach & Bacon Mini Quiches. We usually have chicken or taco meat leftovers, both would be delicious in a quiche.
So many salad possibilities with pita pockets. Chicken caesar salad for my daughter comes to mind. Be sure to use hearty greens! Otherwise, you’ll have soggy lettuce that will end up in the garbage. Try these Mini Salad Pita Pockets from Lauren’s Latest.
Hands down, this is one for my pasta-loving son. If you’re like me, you’ll want to pack in the protein and use Barilla’s ProteinPlus rotini pasta with some chicken and cheese. Get the recipe on I Should Be Mopping the Floor (don’t you love this blog name).
Finally, the Holy Grail of school lunches, “How to Teach Kids to Pack Lunch” from another amazing blogger that I met at Mom 2.0, JoAnn at A Whimsicle Life. With this easy chart, I’m giving my kids ownership of their lunches. Yes, I will be peeking in their bags to make certain they have a balanced meal, but this is all part of learning responsibility as well as nutrition. Awesome chart JoAnn!
Have a favorite go-to school lunch? I’d love to hear about it!
